These might look like corn muffins, but let me just say that they are SO much more!

One night last week, we found ourselves scrambeling for dinner. After a mental scan of the ingredients in the fridge and a lightbulb (moment) later, Chorizo Cornbread Poppers were born. 30 minutes later we were scarfing them down. These poppers are awesome! They're a combo of a few of our favorite Private Side recipes (Trashy Nacho Cheese, Chorizo & Corn Bread). Did I add that they're great with beer too?!
