Every now and then, I love to go back through recipes that I haven't made in a while. That's exactly what I did with these hotcakes. You can find the recipe here on the site. They are super fluffy, and just what the doctor ordered on a chilly morning. You can completely customize this recipe by making a few tweaks here and there. Use 100% whole wheat or all-purpose flour (instead of using half and half)), or use half whole grain spelt flour and half white spelt. You can omit the blueberries and top your cakes with sliced bananas and a sprinkle of cinnamon, sub non-dairy milk for the orange juice, or add a little more or less milk, depending on if you like your hotcakes thick or thin. The possibilities are endless!
