I love revisting favorite recipes, ones that have, for one reason or another, been pushed aside in favor of something new. So when an occasion arises, I have to steal the opportunity. The Peanut Ginger Tofu Salad recipe (from here on the Everyday Dish site) is one of those favorite recipes.
My husband and I decided to take a few hours today, and go "play" at our local ski mountain. It was an absolutely gorgous day, complete with blue sky and warm temperatures. I even worked on my book through the weekend, so that we could take the time off.
Whenever we go skiing, we always pack our own lunch. Not only is there rarely anything we can eat in the cafes, but it's so much fun to pack a custom lunch. Today seemed like a perfect opportunity to whip up a batch of the tofu salad, and let me just say that it was fantastic! I packed some tamari rice crackers to go along with the salad, as well as dried apricots and mango for dessert. There would have been chocolate chip cookies too, but the cookie monsters in our house seemed to have devoured them over the weekend. I also packed a thermos of bourbon rooibos tea for our ride home. What a great feast and fun day we had!
I encourage you to go try this salad. It may not sound like much, but this salad packs a punch of flavor, from peanuts to ginger. It makes a great sandwich, spread and dip, so it's an extremely versatile recipe too!
