Last week we took a few days off and headed to the beautiful mountains of sunny Oregon. Soon after our reservations were made, my mind raced to the food. What was I going to pack for meals? Meals afterall, at least for our family, are of the utmost importance. We like to eat when we go camping!

I quickly grabbed a pad of paper and started making notes. "Hmmm, we need 5 dinners and breakfasts and lunches, plus snacks for 2 adults and 2 teens". Easy. Well maybe not easy, but totally do-able. And all vegan too.

I always made absolutely sure that these babies were a part of cookie trays, gift baskets and personal meetings, especially when I needed to put a smile on someone’s face.

For the past few months we have been working feverishly on launching a Membership side to Everyday Dish TV. We're putting the finishing touches on and it should be polished and ready for its big debut within the week. I love revisting favorite recipes, ones that have, for one reason or another, been pushed aside in favor of something new. So when an occasion arises, I have to steal the opportunity. The Peanut Ginger Tofu Salad recipe (from here on the Everyday Dish site) is one of those favorite recipes.

A while back, Bryanna Clark Grogan told me about a great new skillet she bought. It was one that she had used at a demo, and said that the pan was fantastic, and didn't need extra oil. With a recomendation like that, I had to check it out.

What I discovered is that the Swiss Diamond pans don't contain PFOA. The company says that the non-stick interior is made from a nano-composite containing real Diamond Crystals (in powdered form). PFOA is the chemical that everyone seems to be concerned with in the non-stick pans.
