Last week we took a few days off and headed to the beautiful mountains of sunny Oregon. Soon after our reservations were made, my mind raced to the food. What was I going to pack for meals? Meals afterall, at least for our family, are of the utmost importance. We like to eat when we go camping!
I quickly grabbed a pad of paper and started making notes. "Hmmm, we need 5 dinners and breakfasts and lunches, plus snacks for 2 adults and 2 teens". Easy. Well maybe not easy, but totally do-able. And all vegan too.
