QUINOA KITCHARI

 

Kitchari is considered one of the most healing meals according to the ancient Indian science of ayurveda. It translates as "mixture" and usually refers to a mixture of two grains.
   
    Serves 4 to 6
   
    Ingredients:
   
    1 cup uncooked quinoa
    1 cup dried lentils, rinsed and drained
    5 cups water or stock
    1 small yellow onion, chopped
    8 whole cloves garlic
    1/4 cup minced fresh herbes such as cilantro, Italian parsley & dill
    Soy sauce
    Sea salt and black pepper
   
    1. Place all ingredients except herbs, soy sauce, salt, and pepper in a medium size pot over medium-high heat.
    2. Cook until all the liquid is absorbed, about 25 minutes, stirring occasionally. The consistency should be just slightly liquidy. Add more water if necessary as cooking. Add herbs, soy sauce, salt and pepper to taste.

June 27, 2010 | Wow. This simple dish has it all....taste, nutrition and, when topdressed with a sprinking of grated ginger, chopped herbs and hot oil it's pretty too! We had it for breakfast, in the middle of a hot Phoenix summer. it's that good! —Joanne
