Native Bowl’s Couch Bowl

This is a home-version of the sauce that we serve on our famous Couch Bowl. It’s a little spicy, sweet and oh-so-good! At the food cart, we sauté the tofu on a hot griddle with garlic, pepper and a little soy sauce. You can use any rice you like, although we use Jasmine rice at the cart.

Makes 1 cup, enough sauce for 4 bowls



Sauce:

1/2 cup Korean hot red pepper paste

2 teaspoons toasted sesame seeds

1/4 cup agave nectar

2 teaspoons toasted sesame oil

2 cloves garlic, minced

1/2 cup water

 

Bowl:

About 5 cups steamed rice

1-pound extra firm tofu, sautéed

4 ounces baby spinach, fresh

2 carrots, shredded

8 scallions, sliced

1/4 cup toasted sesame seeds

 

Sauce:

In a small bowl, mix together the red pepper paste, sesame seeds, agave, oil and garlic. Add the water and stir until smooth.

 

To make the “Couch Bowl”:

Layer the steamed rice in 4 bowls. Drizzle with sauce. Top with tofu and a handful of spinach leaves. Sprinkle with shredded carrots and a spoonful of sliced scallions. Drizzle with a little more sauce, and a sprinkle of toasted sesame seeds. Serve the extra sauce on the side.
