Kittee’s Rice Paper Collard Wraps

Kittee's Tofu Army Marinade

Ingredients
  • Extra Firm Tofu cut into cubes
  • Marinade
  • 1 C Water
  • ¼ C Tamari or Soy Sauce
  • 2 Tbs Seasoned Rice Vinegar
  • 1 Tbs Nutritional Yeast
  • ½ tsp Liquid Smoke
  • 1 clove garlic, minced
Instructions
  1. Cut Tofu into cubes
  2. Combine all the marinade ingredients and stir
  3. Add the tofu to Marinade and refrigerate covered for 12 hours for best results (2 hrs minimum)

Kittee's Tofu Army Breading and Baking

Kittee's Tofu Army Marinade Recipe Type : Tofu Marinade Author: Kittee Bee Berns
Ingredients
  • ½ cup nutritional yeast flakes
  • 2 tablespoons potato starch
  • 1 tablespoon sesame seeds (or dried onion flakes)
  • 1 teaspoon curry powder (or ground chipotle pepper, lemon-pepper, taco seasoning, etc.)
  • Pinch salt
  • Large (1 gallon) baggie
  • Kittee's Army of Tofu Marinade
Instructions
  1. Take Marinated Tofu from fridge and drain all the liquid
  2. Place all of the Tofu Breading into the baggie and mix it up
  3. Place, five pieces of tofu, into baggie with breading and give a good shake to cover the tofu
  4. Remove the tofu from the baggie and place onto a pre oil sprayed parchment lined baking sheet
  5. Repeat process until all of the Army of Tofu are lined up and ready
  6. Place tray into a preheated 425 degree oven for 15 minutes
  7. Remove tray from oven and turn all of the tofu over and bake for another 10 minutes until brown
  8. Remove and let cool

Kittee's Rice Paper Collard Wraps

This is how you wrap it up!
Ingredients
  • Herbs
  • Greens
  • Cabbage
  • Beet
  • Cucumbers
  • Radishes
  • Kittee's Army of Tofu (prepped)
  • Seasoned Rice Vinegar
  • Collard Greens
  • Basil
  • Cilantro
  • 28 cm (11 in) Rice paper wraps
Instructions
  1. Prepare Kittee's Tofu Army in advance
  2. Stem collard greens
  3. Wash and prep all the veggies including adding vinegar to your greens
  4. Moisten one rice paper wrap and lay on flat surface
  5. Put collard greens on the wrap vein side down
  6. Lay a generous portion of all your favorite ingredients centered more towards where you are standing
  7. Take the edge that is closest to you and fold ¼ into wrap. Take both sides while holding the ingredients in place and fold ⅛th into center.
  8. Keeping pressure with your thumbs, begin rolling the wrap away from you keeping it tight, roll until the end
  9. Voila! A perfect humongo delish wrap filled with your favorite yummy goodness.

Kittee's Peanut Sauce

Ingredients
  • About 3 tablespoons Peanut Butter
  • 1 tablespoon hot water, or as needed to thin
  • 1 teaspoon Hoisin Sauce, or to taste
  • 1 teaspoon Tamari or soy sauce, or to taste
  • Sriracha to taste
Instructions
  1. Stir peanut butter to incorporate
  2. Add hot water stirring to emulsify
  3. Add Hoisin sauce, soy sauce and sciracha. Adjust flavors to your taste.

    This is so fabulous! I’ve made the noochy tofu this summer and it is delicious!

    I just made this for dinner tonite and it’s amaze-balls! Fun to make, too, I love the modular nature.
