Preserved Lemon Vinaigrette

Preserved Lemon Vinaigrette

This is a very simple yet tangy and tasty vinaigrette that will keep in your fridge. You can put on just about anything.
Ingredients
  • 2 T preserved lemon zest, minced
  • 1 T minced shallot
  • ½ cup champagne or muscat vinegar
  • ½ cup extra virgin olive oil
Instructions
  1. In a bowl, whisk together all of the ingredients. Toss vinaigrette with arugula or other lettuce and serve.
